Creamy Tomato and Fennel Soup Recipe

  • 4 ripe tomatoes, chopped

  • 2 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic and cook until onion is soft and translucent, about 5 minutes.
  2. Add chopped fennel and cook for another 5 minutes, stirring occasionally.
  3. Add chopped tomatoes and vegetable broth. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  4. Use a blender or immersion blender to blend the soup until smooth. If using a blender, be sure to let the soup cool first and work in batches as needed.
  5. Return the soup to the pot and stir in heavy cream. Heat over low heat for 5 minutes, stirring occasionally, until heated through.
  6. Season with salt and pepper to taste. Serve hot.
