Ingredients:
- 1 lb. hot Italian sausage, casings removed
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cups chicken broth
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 cup heavy cream
- 1 tsp. dried basil
- 1 tsp. dried oregano
- 1/2 tsp. smoked paprika
- 1/2 tsp. red pepper flakes
- 12 oz. penne pasta
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions:
- In a large pot or Dutch oven, cook the sausage over medium heat, breaking it up into small pieces with a wooden spoon, until browned and cooked through.
- Add the onion, garlic, and bell peppers and cook for 5-7 minutes, until the vegetables are softened and the onion is translucent.
- Pour in the chicken broth, diced tomatoes, heavy cream, basil, oregano, smoked paprika, and red pepper flakes. Stir to combine.
- Add the pasta and stir to coat it in the sauce. Bring the mixture to a simmer and cook for 12-15 minutes, stirring occasionally, until the pasta is cooked and the sauce has thickened.
- Stir in the Parmesan cheese and season the dish with salt and pepper to taste.
