Ingredients:

  • 1 lb. hot Italian sausage, casings removed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup heavy cream
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • 1/2 tsp. smoked paprika
  • 1/2 tsp. red pepper flakes
  • 12 oz. penne pasta
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions:

  1. In a large pot or Dutch oven, cook the sausage over medium heat, breaking it up into small pieces with a wooden spoon, until browned and cooked through.
  2. Add the onion, garlic, and bell peppers and cook for 5-7 minutes, until the vegetables are softened and the onion is translucent.
  3. Pour in the chicken broth, diced tomatoes, heavy cream, basil, oregano, smoked paprika, and red pepper flakes. Stir to combine.
