  • 1/4 cup olive oil
  • 3 tbsp fresh lime juice
  • 1 tsp ground cumin
  • 1 tsp chili powder

Start by cooking the quinoa. Rinse the quinoa in a fine mesh strainer and add it to a medium saucepan with the water or vegetable broth. Bring to a boil, then reduce heat to low and cover the pan. Cook for 15-20 minutes or until the water has been absorbed and the quinoa is tender. Fluff with a fork and set aside.

In a large bowl, combine the cooked quinoa, black beans, diced bell peppers, and chopped red onion. Toss to combine.

In a small bowl, whisk together the olive oil, lime juice, cumin, chili powder, salt, and pepper. Pour the dressing over the quinoa mixture and toss to coat. Add the chopped cilantro and toss again.
