Delicious Spinach and Artichoke Pasta Recipe

Ingredients:

  • 1 pound of pasta (we recommend penne or fusilli)
  • 1 can of artichoke hearts, drained and chopped
  • 2 cups of fresh spinach, chopped
  • 4 cloves of garlic, minced
  • 1/4 cup of olive oil
  • 1/4 cup of grated parmesan cheese
  • Salt and pepper to taste

Instructions:

  1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, following the package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  3. Add the chopped artichoke hearts and cook for 2-3 minutes, stirring occasionally.
  4. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
