Ingredients:

  • 1 red bell pepper, seeded and sliced into strips
  • 1 yellow bell pepper, seeded and sliced into strips
  • 1 zucchini, sliced diagonally
  • 1 yellow squash, sliced diagonally
  • 1 red onion, sliced into rounds
  • 1/4 cup olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 cups mixed greens
First, preheat your grill to medium-high heat. While the grill heats up, toss the sliced vegetables with olive oil, salt, and black pepper in a large bowl.Once the grill is hot, place the vegetables on the grill and cook for 5-7 minutes on each side, or until they are tender and have grill marks.Remove the vegetables from the grill and let them cool for a few minutes. Then, arrange the mixed greens on a large platter and top with the grilled vegetables.

Basil Vinaigrette:

  • 1/4 cup fresh basil leaves
  • 2 tbsp red wine vinegar

  • 1/4 cup olive oil
