Caldo Verde is a classic Portuguese soup that combines the flavors of kale, potatoes, and chorizo sausage. This hearty soup is perfect for a cold winter day or a cozy dinner with friends and family.
Ingredients:
- 6 cups chicken broth
- 1 lb. smoked chorizo sausage, sliced
- 1 large onion, chopped
- 2 lbs. potatoes, peeled and diced
- 1 bunch kale, stems removed and chopped
- 4 garlic cloves, minced
- Salt and pepper to taste

To make Caldo Verde soup, start by heating some olive oil in a large pot over medium heat. Add the chopped onion and sauté until softened, about 5 minutes. Then add the sliced chorizo sausage and cook until browned, stirring occasionally, for about 10 minutes.
