Ingredients:

  • 2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 32 oz cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 1 tsp vanilla extract
  • 4 eggs
  • 1/2 cup heavy cream
  • 1 cup semisweet chocolate chips, melted

Preheat the oven to 350°F. In a mixing bowl, combine the chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and set aside to cool.
