  • 2 tablespoons butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup uncooked white rice
  • 2 cups cooked and shredded chicken
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic and cook until softened.
  2. Add the chicken broth and uncooked rice to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the rice is cooked through.
  3. Add the shredded chicken, milk, heavy cream, thyme, salt, and pepper to the pot. Simmer for an additional 10-15 minutes.
  4. Remove from heat and let cool slightly. Use an immersion blender to puree the soup until smooth and creamy (alternatively, transfer to a blender and puree in batches).
