Cobb Salad with Grilled Steak Recipe

Ingredients:

  • 1 lb. sirloin steak
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp. Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 4 cups mixed greens
  • 4 hard-boiled eggs, sliced
  • 4 slices cooked bacon, crumbled
  • 1 avocado, diced
  • 1/2 cup crumbled blue cheese

To start, preheat your grill to high heat. While the grill heats up, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper in a small bowl. Place the steak on the grill and cook for 3-4 minutes per side for medium-rare. Once cooked, set the steak aside and let it rest for 5-10 minutes before slicing.

While the steak rests, prepare the rest of the salad. Divide the mixed greens onto 4 plates and top each with sliced hard-boiled eggs, crumbled bacon, diced avocado, and crumbled blue cheese.

Once the steak has rested, slice it against the grain into thin strips. Divide the steak among the 4 plates, arranging it on top of the mixed greens and other ingredients. Drizzle the dressing over the salads and serve immediately.
