If you're looking for a delicious appetizer or side dish, these baked potato skins with cheddar and bacon are sure to please. They're crispy, cheesy, and oh-so-satisfying.

Ingredients:

  • 4 large baking potatoes
  • 1/2 cup melted butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 8 slices crispy bacon, crumbled
  • 2 tablespoons chopped fresh chives

Instructions:

  1. Preheat your oven to 400°F. Scrub the potatoes clean and pierce them with a fork. Bake the potatoes for about 1 hour, or until they're tender when pierced with a fork. Let them cool.
  2. Cut the potatoes in half lengthwise and scoop out the flesh, leaving about 1/4 inch of potato attached to the skin. Reserve the potato flesh for another use.
  3. Brush both sides of the potato skins with melted butter and sprinkle with salt and pepper. Place them skin-side down on a baking sheet and bake for about 10 minutes, or until they're lightly browned and crispy.
  4. Flip the potato skins over and sprinkle them with shredded cheddar cheese and crispy bacon bits. Return them to the oven and bake for another 5-10 minutes, or until the cheese is melted and bubbly.
  5. Top the potato skins with chopped chives and serve them hot.

These baked potato skins are perfect for a party or game day snack. They're easy to make and always a crowd-pleaser. Try adding your own twist by adding different toppings like sour cream, green onions, or even jalapeños. Enjoy!
