Ingredients:

  • 1 cup barley
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 cup chopped mushrooms
  • 1 cup chopped spinach
  • 1 tablespoon fresh thyme leaves
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
To start, rinse the barley and place it in a pot with the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for 30 minutes, or until the barley is tender.Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté for 5 minutes, or until the onion is translucent. Add the mushrooms and cook for another 5 minutes, or until they start to release their juices. Finally, add the spinach and thyme and cook for 2-3 minutes, or until the spinach is wilted.When the barley is done, add it to the skillet with the vegetables and stir everything together.
