These mini chicken quesadillas with guacamole are the perfect appetizer or snack for any occasion. They are easy to make, delicious, and sure to impress your guests. Here is the recipe:
Ingredients:
- 1 pound cooked chicken breast, shredded
- 1/2 cup diced onion
- 1/2 cup diced green bell pepper
- 1/2 cup diced red bell pepper
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded Mexican cheese blend
- 12 flour tortillas, 6-inch size
- 1/4 cup chopped fresh cilantro
- 1 avocado, peeled and mashed
- 1 tablespoon lime juice
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
Start by preheating your oven to 375°F. In a large bowl, combine the shredded chicken, diced onion, green and red bell peppers, cumin, chili powder, salt, and black pepper. Mix well.
Take one flour tortilla and place a spoonful of the chicken mixture in the center. Sprinkle some shredded cheese over the top. Fold the tortilla in half and place it on a baking sheet. Repeat with the remaining tortillas and chicken mixture.
Bake the mini chicken quesadillas in the preheated oven for 10-12 minutes or until the cheese is melted and the tortillas are golden brown. While the quesadillas are baking, make the guacamole. In a small bowl, combine the mashed avocado, lime juice, garlic powder, and salt. Mix well.
Once the mini chicken quesadillas are done, remove them from the oven and sprinkle some chopped cilantro over the top. Serve with the guacamole on the side.
