Ingredients:
- 6 cups fresh spinach, washed and dried
- 8 slices of bacon, cooked and crumbled
- 3 hard-boiled eggs, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup sliced almonds
- 1/3 cup olive oil
- 1/4 cup apple cider vinegar
- 2 tablespoons honey
- Salt and pepper to taste
Start by washing and drying 6 cups of fresh spinach leaves.
Cook 8 slices of bacon until crispy, then crumble it into small pieces.
In a large salad bowl, combine the spinach, bacon, 3 sliced hard-boiled eggs, thinly sliced red onion, and sliced almonds. Toss everything together gently.
Warm Bacon Dressing:
In a small saucepan, heat 1/3 cup of olive oil and 1/4 cup of apple cider vinegar over medium heat. Stir in 2 tablespoons of honey and season with salt and pepper. Cook for 2-3 minutes or until the dressing is warm.
Drizzle the warm bacon dressing over the salad and toss gently to coat. Serve immediately and enjoy!
