Ingredients:

  • 2 cups of cooked white rice
  • 1/2 pound of shrimp, peeled and deveined
  • 1/2 cup of frozen peas and carrots
  • 1/2 cup of diced onion
  • 2 cloves of garlic, minced
  • 2 tablespoons of vegetable oil
  • 2 eggs, lightly beaten
  • 1/4 cup of soy sauce
  • 1/4 teaspoon of sesame oil
  • 1/4 teaspoon of black pepper

Start by cooking the rice according to package instructions and set aside. Heat the vegetable oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes until pink. Remove the shrimp from the skillet and set aside.
