Ingredients:
- 1 lb dried split peas, rinsed and drained
- 1 ham bone or 2 ham hocks
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups chicken broth
- 2 cups water
- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions:
- In a large pot, combine the split peas, ham bone or hocks, onion, carrots, celery, chicken broth, water, bay leaves, thyme, salt, and pepper.
- Bring to a boil, then reduce heat to low and cover the pot.
- Simmer for 1 1/2 to 2 hours, or until the peas are soft and the ham is falling off the bone.
- Remove the ham bone or hocks and bay leaves from the pot.
- Using an immersion blender, puree the soup until smooth and creamy.
- If the soup is too thick, add more water or chicken broth to thin it out.
- Season with additional salt and pepper to taste.
