Ingredients:

  • 1 lb dried split peas, rinsed and drained
  • 1 ham bone or 2 ham hocks
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 2 cups water
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions:

  1. In a large pot, combine the split peas, ham bone or hocks, onion, carrots, celery, chicken broth, water, bay leaves, thyme, salt, and pepper.
  2. Bring to a boil, then reduce heat to low and cover the pot.
  3. Simmer for 1 1/2 to 2 hours, or until the peas are soft and the ham is falling off the bone.
  4. Remove the ham bone or hocks and bay leaves from the pot.
  5. Using an immersion blender, puree the soup until smooth and creamy.
  6. If the soup is too thick, add more water or chicken broth to thin it out.
  7. Season with additional salt and pepper to taste.
