  • 2 cups cooked brown rice
  • 1 tablespoon coconut oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon grated ginger
  • 2 cups shredded carrots
  • 1 red bell pepper, chopped
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Start by cooking 2 cups of brown rice according to package instructions. While the rice is cooking, heat 1 tablespoon of coconut oil in a large skillet over medium-high heat.

Add the chopped onion, minced garlic, and grated ginger to the skillet. Cook for 2-3 minutes, stirring occasionally, until the onion is translucent and the garlic and ginger are fragrant.
