Delicious and Easy Mini Beef Empanadas Recipe

Ingredients:

  • 1 lb. ground beef
  • 1 small onion, chopped
  • 1 tsp. garlic powder
  • 1 tsp. paprika
  • 1/2 tsp. cumin
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 package refrigerated pie crusts (2 crusts)
  • 1 egg, beaten

Instructions:

  1. Preheat your oven to 375°F.
  2. In a large skillet, cook the ground beef and onions over medium heat until the beef is browned and cooked through, stirring occasionally. Drain off any excess fat.
  3. Add the garlic powder, paprika, cumin, salt, and black pepper to the skillet and stir to combine.
  4. Unroll the pie crusts and use a 2 1/2-inch round cookie cutter or cup to cut out circles from the crusts.
  5. Place a spoonful of the beef mixture in the center of each circle.
  6. Using your finger, lightly brush the edges of the crust circles with water.
  7. Fold the circles in half to create semicircles, and press the edges together to seal.
  8. Crimp the edges of the empanadas with a fork to create a decorative edge.
  9. Place the empanadas on a baking sheet lined with parchment paper.
  10. Brush the tops of the empanadas with the beaten egg.
  11. Bake for 15-20 minutes, or until the empanadas are golden brown and crispy.
