Ingredients:
- 2 pounds of potatoes, peeled and cut into small pieces
- 1/2 cup of heavy cream
- 4 tablespoons of unsalted butter
- 3 cloves of garlic, minced
- 1 tablespoon of chopped fresh thyme
- Salt and pepper to taste
Start by peeling and cutting the potatoes into small pieces. Place them in a large pot and cover with cold water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
While the potatoes are cooking, melt the butter in a separate pan over medium heat. Add the minced garlic and chopped thyme, and cook for 1-2 minutes until fragrant.
Once the potatoes are cooked, drain them and return them to the pot. Add the garlic and herb butter, heavy cream, salt, and pepper. Mash the potatoes with a potato masher or hand mixer until smooth and creamy.
Serve the creamy garlic and herb mashed potatoes hot, garnished with chopped fresh herbs if desired.
