Ingredients:

  • 4 eggs
  • 1 tablespoon sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon vegetable oil
  • 1 cup sushi rice
  • 1 1/4 cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • Nori sheets
  • Sesame seeds

To make the tamagoyaki, whisk together the eggs, sugar, soy sauce, and mirin in a bowl. Heat a non-stick frying pan over medium heat and add the vegetable oil. Pour in a thin layer of the egg mixture and cook until set. Roll up the omelet and move it to the side of the pan. Add another thin layer of the egg mixture, tilting the pan to spread the egg evenly. Repeat until all the egg mixture is used up. Remove the tamagoyaki from the pan and let it cool.

For the sushi rice, rinse the rice in cold water until the water runs clear. In a pot, combine the rice and water and bring to a boil. Reduce the heat to low and simmer for 15 minutes. Remove from heat and let it sit covered for 10 minutes. In a small bowl, whisk together the rice vinegar, sugar, and salt. Add the mixture to the rice and stir to combine.

To assemble the sushi roll, place a sheet of nori on top of a bamboo rolling mat. Spread a layer of sushi rice over the nori, leaving a small border at the top. Cut the tamagoyaki into thin strips and place them on top of the rice. Roll the sushi tightly, using the mat to help you. Sprinkle sesame seeds over the roll and slice into bite-sized pieces.
