  • 1 cup jasmine rice
  • 4 cups vegetable broth

  • 1 tablespoon red curry paste
  • 1 tablespoon fish sauce (optional)
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat the coconut oil over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
  2. Add the red bell pepper and cook for another 3 minutes.
  3. Add the jasmine rice, vegetable broth, and coconut milk to the pot. Stir to combine.
