Ingredients
- 2 cups of cooked jasmine rice
- 1 small pineapple
- 1 red pepper
- 1 green pepper
- 1 onion
- 2 cloves of garlic
- 1 tablespoon of vegetable oil
- 2 tablespoons of soy sauce
- 1 tablespoon of fish sauce
- 1 teaspoon of sugar
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 cup of cashew nuts
- 2 tablespoons of chopped green onions

Instructions
- Cut the pineapple in half lengthwise and remove the fruit from the center. Cut the pineapple flesh into small pieces and set aside.
- Cut the red pepper, green pepper, and onion into small pieces. Mince the garlic.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the garlic and stir-fry for 10 seconds.
- Add the red pepper, green pepper, and onion to the skillet and stir-fry for 2-3 minutes.
- Add the cooked jasmine rice, pineapple pieces, soy sauce, fish sauce, sugar, salt, and black pepper to the skillet. Mix well and stir-fry for 2-3 minutes.
- Add the cashew nuts and chopped green onions to the skillet. Stir-fry for another 1-2 minutes.
- Remove the skillet from the heat and serve the Thai Pineapple Fried Rice hot.
