Ingredients:

  • 1 pound of penne pasta
  • 1 pound of cooked andouille sausage, sliced
  • 1 diced onion
  • 1 diced red bell pepper
  • 1 diced green bell pepper
  • 4 cloves of minced garlic
  • 3 cups of chicken broth
  • 1 cup of heavy cream
  • 2 tablespoons of cajun seasoning
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 cup of chopped parsley

To start, heat a large pot over medium-high heat. Add the sliced andouille sausage and cook until browned, then remove from the pot and set aside. In the same pot, add the diced onion, red bell pepper, green bell pepper, and minced garlic. Cook until the vegetables are tender, about 5 minutes.

Add the penne pasta to the pot, along with the chicken broth, heavy cream, cajun seasoning, salt, and black pepper. Stir to combine, then bring the mixture to a boil. Reduce the heat to medium-low and let the pasta simmer for 15-20 minutes, or until the pasta is cooked and the sauce has thickened.
