Moroccan Chicken and Rice Recipe

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp ground ginger
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • 1/4 tsp turmeric
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup chicken broth
  • 1 cup long-grain white rice
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped toasted almonds

Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5 minutes. Remove the chicken from the skillet and set aside.
  2. Add the onion and garlic to the skillet and cook until softened, about 3 minutes.
  3. Add the cumin, coriander, paprika, ginger, cinnamon, cayenne pepper, and turmeric to the skillet and cook for 1 minute, stirring constantly.
  4. Add the diced tomatoes and chicken broth to the skillet and stir to combine.
  5. Return the chicken to the skillet and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.
