Ingredients:
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups chicken or vegetable broth
- 1 (14.5 oz) can diced tomatoes

- 6 cups fresh spinach, rinsed and chopped

Instructions:
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened, around 5 minutes.
- Add the broth, diced tomatoes, oregano, basil, salt, and pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add the chopped spinach and simmer for another 5 minutes or until the spinach is wilted.
- Remove the pot from the heat and let cool for a few minutes. Using an immersion blender, blend the soup until smooth.
