  • 1 medium zucchini, sliced

  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey
  • 2 garlic cloves, minced
To start, preheat your grill to medium-high heat. While the grill is heating up, slice the zucchini and eggplant into 1/4 inch thick slices. In a small bowl, mix together the olive oil, salt, and black pepper.Brush the mixture onto the zucchini and eggplant slices, making sure to coat them evenly.
