Ingredients:
- 2 cups dried white beans
- 1 onion, chopped
- 2 garlic cloves, minced
- 3 celery stalks, chopped
- 3 carrots, chopped
- 1 can of diced tomatoes
- 1 tablespoon of tomato paste
- 6 cups of vegetable broth
- 1 tablespoon of olive oil
- 1 teaspoon of dried thyme
- 1 bay leaf
- Salt and black pepper to taste
Instructions:
- Soak the white beans overnight, then drain and rinse them.
- Heat olive oil in a large pot over medium-high heat. Add onion, garlic, celery, and carrots. Cook until the veggies are soft, around 10 minutes.
- Add the diced tomatoes, tomato paste, white beans, thyme, and bay leaf to the pot. Pour in the vegetable broth and bring the soup to a boil.
- Reduce heat to a simmer and let the soup cook for 1 hour, or until the beans are tender.
- Remove the bay leaf and use an immersion blender or a regular blender to blend the soup until it's smooth and creamy.
- Season with salt and black pepper to taste.
