Delicious Italian White Bean Soup Recipe

Ingredients:

  • 2 cups dried white beans
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 3 celery stalks, chopped
  • 3 carrots, chopped
  • 1 can of diced tomatoes
  • 1 tablespoon of tomato paste
  • 6 cups of vegetable broth
  • 1 tablespoon of olive oil
  • 1 teaspoon of dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste

Instructions:

  1. Soak the white beans overnight, then drain and rinse them.
  2. Heat olive oil in a large pot over medium-high heat. Add onion, garlic, celery, and carrots. Cook until the veggies are soft, around 10 minutes.
  3. Add the diced tomatoes, tomato paste, white beans, thyme, and bay leaf to the pot. Pour in the vegetable broth and bring the soup to a boil.
  4. Reduce heat to a simmer and let the soup cook for 1 hour, or until the beans are tender.
  5. Remove the bay leaf and use an immersion blender or a regular blender to blend the soup until it's smooth and creamy.
  6. Season with salt and black pepper to taste.
