Ingredients:
- 1 red bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 1 zucchini
- 1 yellow squash
- 1 red onion
- 1 cup cherry tomatoes
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 skewers
Before you start, soak the skewers in water for at least 30 minutes to prevent them from burning on the grill.
Instructions:
- Preheat your grill to medium-high heat.
- Cut the bell peppers, zucchini, yellow squash, and red onion into bite-sized pieces.
- Thread the vegetables and cherry tomatoes onto the skewers, alternating colors and varieties.
- In a small bowl, whisk together the olive oil, balsamic vinegar, honey, oregano, salt, and black pepper.
- Brush the skewers with the marinade, making sure to coat all sides.
- Place the skewers on the grill and cook for 8-10 minutes, turning occasionally, until the vegetables are tender and lightly charred.
- Remove the skewers from the grill and sprinkle the crumbled feta cheese over the top.
- Serve immediately and enjoy!
