Ingredients:

  • 1 pound dried split peas
  • 1 ham hock or 2 ham shanks
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken or vegetable broth
  • 2 cups water
  • 2 garlic cloves, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

  1. Rinse split peas and pick out any debris.
  2. In a large pot, add split peas, ham hock or shanks, onion, carrots, celery, broth, water, garlic, bay leaf, and thyme.
  3. Bring to a boil, then reduce heat to medium-low.
  4. Cover and simmer for 1 1/2 to 2 hours, stirring occasionally, until peas are tender and soup is thickened.
  5. Remove ham hock or shanks, shred meat and add back to soup. Discard bones and fat.
  6. Add salt and pepper to taste.
