Are you craving a sweet treat that combines the creamy goodness of cheesecake with the crunch of Oreos? Look no further than these irresistible Oreo Cheesecake Bars!
Ingredients:
- 24 Oreo cookies
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 tsp vanilla extract
To start, preheat your oven to 325°F and line an 8x8 inch baking dish with parchment paper.
Next, crush 16 of the Oreo cookies into small pieces and set aside. Place the remaining 8 Oreos in a plastic bag and crush them into fine crumbs using a rolling pin or food processor.
In a large mixing bowl, beat the cream cheese and sugar together until smooth. Add the eggs and vanilla extract, and continue mixing until well combined.
Stir in the crushed Oreo pieces, reserving a small amount for topping, and mix until evenly distributed. Pour the mixture into the prepared baking dish and sprinkle the remaining Oreo crumbs on top.
Bake the Oreo Cheesecake Bars for 30-35 minutes, or until the edges are lightly browned and the center is set. Allow to cool at room temperature for at least 30 minutes before refrigerating for 2-3 hours to fully set.
Once set, remove the Oreo Cheesecake Bars from the baking dish and slice into 9 equal bars. Serve chilled and enjoy!
