Ingredients:
- 1 pound of pasta
- 6 strips of bacon, diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 can of diced tomatoes, undrained
- 1 cup of heavy cream
- 1/2 cup of grated Parmesan cheese
- Salt and pepper to taste
Start by cooking the pasta according to the package instructions. While the pasta is cooking, fry the diced bacon in a large skillet until crispy. Remove the bacon and set it aside, leaving the bacon grease in the skillet.
Add the diced onion and minced garlic to the skillet and cook until the onion is translucent. Add the can of diced tomatoes (undrained) to the skillet and bring the mixture to a simmer. Cook for 5 minutes or until the sauce has thickened slightly.
Reduce the heat to low and add the heavy cream and Parmesan cheese to the skillet. Stir until the cheese has melted and the sauce is creamy. Add salt and pepper to taste.
Drain the pasta and add it to the skillet with the sauce. Toss the pasta with the sauce until it's well coated. Serve immediately, topped with the crispy bacon.
