Ingredients:

  • 8 oz rice noodles
  • 2 tbsp vegetable oil
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snow peas
  • 1 cup sliced mushrooms
  • 1 tbsp soy sauce
  • 1 tbsp sriracha sauce
  • 1 tsp ground ginger
  • 1 tsp red pepper flakes
  • Salt and pepper to taste

Before you start cooking, prepare the rice noodles according to the package instructions. Once the noodles are cooked, drain them and set them aside.

Next, heat the vegetable oil in a large skillet over medium-high heat. Add the onion and garlic and sauté until the onion is translucent, about 3-4 minutes.
