Ingredients:

  • 1 cup barley
  • 1 cup red lentils
  • 1 onion, chopped
  • 2 garlic cloves, minced

  • 1 carrot, chopped
  • 1 can diced tomatoes
  • 1 can coconut milk
  • 1 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions:

  1. Cook the barley according to package instructions and set aside.
  2. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened.
  3. Add the red bell pepper, zucchini, and carrot and cook for 5 minutes or until the vegetables are tender.
  4. Add the diced tomatoes, coconut milk, and spices to the pot and stir to combine.
