Ingredients:
- 1 cup of lentils, rinsed and drained
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 4 cups of vegetable broth
- 2 tablespoons of olive oil
Instructions:
- Heat olive oil in a large pot over medium heat. Add onions, carrots, celery, and garlic. Sauté for 5-7 minutes until vegetables are tender.
- Add cumin, paprika, salt, and pepper. Stir in lentils and vegetable broth.
- Bring mixture to a boil, then reduce heat and simmer for 25-30 minutes or until lentils are tender.
- Remove from heat and let cool for a few minutes. Using an immersion blender, blend until smooth or to your desired consistency.
