Lentil Soup Recipe: Healthy and Hearty Comfort Food

Ingredients:

  • 1 cup of lentils, rinsed and drained
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 4 cups of vegetable broth
  • 2 tablespoons of olive oil

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add onions, carrots, celery, and garlic. Sauté for 5-7 minutes until vegetables are tender.
  2. Add cumin, paprika, salt, and pepper. Stir in lentils and vegetable broth.
  3. Bring mixture to a boil, then reduce heat and simmer for 25-30 minutes or until lentils are tender.
  4. Remove from heat and let cool for a few minutes. Using an immersion blender, blend until smooth or to your desired consistency.
  5. Serve hot and enjoy!
