Healthy and Hearty Lentil Soup Recipe

Ingredients:

  • 1 cup dried lentils, rinsed and drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions:

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic and sauté until onion is translucent, about 5 minutes.
  3. Add the carrots and celery and sauté for another 5 minutes.
  4. Add the lentils, vegetable broth, diced tomatoes, cumin, smoked paprika, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 30-40 minutes, until lentils are soft and fully cooked.
  6. Using an immersion blender, blend the soup until smooth and creamy.
  7. Serve hot, garnished with fresh parsley if desired.

Tips:

  • For a heartier soup, add some cooked quinoa or brown rice to the pot.
  • If you don't have an immersion blender, you can use a regular blender to puree the soup in batches.
  • This soup can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
