Ingredients:
- 1 pound pasta
- 1 pound spicy Italian sausage, casings removed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, diced
- 4 cloves garlic, minced
- 1/4 cup tomato paste
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned and cooked through, about 8-10 minutes. Remove the sausage from the skillet and set aside.
- Add the sliced bell peppers and onion to the skillet and cook, stirring occasionally, until softened, about 5-7 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
- Stir in the tomato paste and chicken broth and bring the mixture to a simmer. Cook for 5-7 minutes, until the sauce has thickened slightly.
- Add the cooked pasta and sausage to the skillet and toss to combine with the sauce. Stir in the heavy cream and Parmesan cheese and cook for an additional 1-2 minutes, until the sauce is heated through and the cheese is melted.
- Season with salt and pepper to taste. Serve hot, garnished with additional grated Parmesan cheese and fresh parsley if desired.
