Delicious Spicy Sausage and Peppers Pasta Recipe

Ingredients:

  • 1 pound pasta
  • 1 pound spicy Italian sausage, casings removed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1/4 cup tomato paste
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned and cooked through, about 8-10 minutes. Remove the sausage from the skillet and set aside.
  3. Add the sliced bell peppers and onion to the skillet and cook, stirring occasionally, until softened, about 5-7 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
  4. Stir in the tomato paste and chicken broth and bring the mixture to a simmer. Cook for 5-7 minutes, until the sauce has thickened slightly.
  5. Add the cooked pasta and sausage to the skillet and toss to combine with the sauce. Stir in the heavy cream and Parmesan cheese and cook for an additional 1-2 minutes, until the sauce is heated through and the cheese is melted.
  6. Season with salt and pepper to taste. Serve hot, garnished with additional grated Parmesan cheese and fresh parsley if desired.
