Ingredients:

  • 1 lb. ricotta cheese
  • 2 eggs
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp. chopped fresh parsley
  • 1 tbsp. chopped fresh basil
  • 1 tbsp. chopped fresh thyme
  • 2 cloves garlic, minced
  • 1 lemon, zested
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 cup all-purpose flour
  • 4 tbsp. unsalted butter
  • 1/4 cup olive oil
  • 1/4 cup grated Parmesan cheese, for serving

Start by mixing together the ricotta cheese, eggs, grated Parmesan cheese, parsley, basil, thyme, garlic, lemon zest, salt, and black pepper in a large bowl. Once everything is well combined, gradually add in the flour, mixing until the dough comes together.

Next, divide the dough into four equal parts and roll each section out into a long rope, approximately 1/2 inch in diameter. Cut the ropes into 1-inch pieces, and use a fork to gently press down on each piece to create a slight indentation.

Bring a large pot of salted water to a boil, and add the gnocchi in batches. Cook for 2-3 minutes, or until the gnocchi float to the surface. Remove the gnocchi with a slotted spoon and transfer to a plate.
