Ingredients:

  • 1 pound linguine
  • 1 pound spicy Italian sausage, casings removed
  • 1 onion, diced

  • 1 can (28 ounces) diced tomatoes
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste

Directions:

  1. Cook the linguine according to package instructions, then drain and set aside.
  2. In a large skillet, cook the sausage over medium-high heat until browned and cooked through, breaking it up into small pieces as it cooks.
  3. Remove the sausage from the skillet and set it aside.
  4. Add the onion to the same skillet and cook until softened and translucent, about 5 minutes.
  5. Add the garlic to the skillet and cook for an additional minute, stirring constantly.
  6. Add the diced tomatoes, basil, and red pepper flakes to the skillet, and bring the mixture to a simmer.
  7. Simmer the tomato mixture for about 10 minutes, until it has thickened slightly.
  8. Return the cooked sausage to the skillet, and stir to combine.
  9. Add the cooked linguine to the skillet, and toss to coat the noodles in the sauce.
  10. Stir in the grated Parmesan cheese, and season with salt and pepper to taste.
Serve the Spicy Sausage and Tomato Linguine immediately, garnished with additional Parmesan cheese and fresh basil leaves if desired. This dish pairs well with a simple green salad and a glass of red wine for a complete and satisfying meal.
