Ingredients:

  • 1 cup wild rice
  • 2 cups chicken broth
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breasts
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste

Begin by preheating your oven to 375°F. In a large pot, bring the chicken broth to a boil. Add the wild rice and reduce the heat to a simmer. Cover the pot and cook for 40-45 minutes, or until the rice is tender and the liquid has been absorbed.

While the rice is cooking, prepare the chicken. In a small bowl, whisk together the lemon zest, lemon juice, olive oil, minced garlic, dried thyme, and dried rosemary. Season the chicken breasts with salt and pepper, then brush the herb mixture over both sides of each chicken breast.

Place the chicken breasts on a baking sheet and bake for 20-25 minutes, or until the chicken is cooked through and no longer pink in the center. Once the rice is done, fluff it with a fork and add salt and pepper to taste. Serve the chicken breasts over a bed of wild rice and enjoy!
