One-Pot Creamy Chicken and Mushroom Pasta Recipe

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into small pieces
  • 8 oz sliced mushrooms
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz uncooked pasta
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Directions:

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned, about 5-7 minutes.
  2. Add sliced mushrooms, diced onion, and minced garlic to the pot. Cook until vegetables are softened, stirring occasionally, about 5-7 minutes.
  3. Add dried thyme, dried basil, salt, and black pepper to the pot. Stir to combine.
  4. Add chicken broth, heavy cream, and uncooked pasta to the pot. Stir to combine.
  5. Bring mixture to a boil, then reduce heat to medium-low and cover the pot. Simmer until pasta is cooked and the sauce has thickened, stirring occasionally, about 15-20 minutes.
  6. Remove pot from heat and stir in grated Parmesan cheese until melted and combined.
  7. Garnish with chopped fresh parsley and serve immediately.
