Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into small pieces
- 8 oz sliced mushrooms
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups chicken broth
- 1 cup heavy cream
- 8 oz uncooked pasta
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Directions:
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned, about 5-7 minutes.
- Add sliced mushrooms, diced onion, and minced garlic to the pot. Cook until vegetables are softened, stirring occasionally, about 5-7 minutes.
