Instructions
- Heat olive oil in a large pot over medium-high heat. Add chicken and cook until browned, about 5 minutes. Remove from pot and set aside.
- Add garlic and ginger to the same pot and cook for 1 minute.
- Add red and yellow bell peppers, onion, and mushrooms to the pot and cook until vegetables are tender, about 5 minutes.

- Bring mixture to a boil, then reduce heat to medium-low and simmer until noodles are cooked, about 10 minutes.
- Return chicken to the pot and cook until heated through, about 3 minutes.
- Garnish with sliced green onions and serve hot.
