Ingredients:
- 8 oz sweet potato noodles
- 1/2 lb beef, thinly sliced
- 2 cloves garlic, minced
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 4 green onions, sliced
- 4 shiitake mushrooms, sliced
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 1 tablespoon sugar
- 1 tablespoon sesame oil
- 1 tablespoon sesame seeds
To begin, soak the sweet potato noodles in cold water for 30 minutes. Then, boil the noodles for 5-7 minutes until they are soft but not mushy. Drain and rinse with cold water to prevent them from sticking together.
Next, heat the vegetable oil in a large skillet over high heat. Add the beef and garlic, and cook until the beef is browned. Remove the beef from the skillet and set aside.
Add the onion, red bell pepper, carrot, green onions, and shiitake mushrooms to the skillet. Cook for 3-5 minutes until the vegetables are tender but still crisp.
Now it's time to add the noodles and the sauce. In a small bowl, mix together the soy sauce, sugar, and sesame oil. Add the noodles and sauce to the skillet with the vegetables, and cook for an additional 2-3 minutes until everything is well combined.
