Ingredients:
- 8 oz. of rice noodles
- 1 red bell pepper, thinly sliced
- 1 cup of shredded carrots
- 1 cup of shredded purple cabbage
- 1/4 cup of fresh cilantro, chopped
- 1/4 cup of roasted peanuts, chopped
- 1/4 cup of sesame seeds
For the Spicy Peanut Sauce:
- 1/2 cup of natural peanut butter
- 2 tbsp. of soy sauce
- 1 tbsp. of honey
- 1 tbsp. of rice vinegar
- 1 tbsp. of sesame oil
- 1/2 tsp. of sriracha sauce
- 1 garlic clove, minced
- 1/4 cup of water
Instructions:
- Prepare the rice noodles according to the package instructions, then rinse them under cold water and set them aside.
- In a large bowl, mix together the red bell pepper, shredded carrots, purple cabbage, and cilantro.
- In a separate bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, sriracha sauce, minced garlic, and water. Mix until the sauce is smooth and creamy.
- Add the cooked rice noodles to the bowl with the vegetables and toss until they are evenly distributed.
- Pour the spicy peanut sauce over the top of the noodles and vegetables, and toss everything together until it is coated in the sauce.
- Sprinkle the top of the salad with chopped roasted peanuts and sesame seeds.
- Refrigerate the salad for at least 30 minutes before serving to allow the flavors to blend together.
